When to use each funcition

Depending on the Ninja Creami model that you have, the function that you will use to process your frozen treats can vary. Choosing the correct function can be a bit overwhelming at times. But, it's not a perfect science. You can look at the chart below and determine what process might work best for your recipe based on the ingredients used. But, don't overthink it or overcomplicate it.
The majority of the time you'll probably use ice cream or lite ice cream.

If your ice cream is super low in fat, calories, sugar etc, then use lite ice cream.

If you are using higher fat, calories, and sugar recipes, then use the ice cream setting.

Most of the time you'll want to use the lite ice cream setting if you are using a recipe made with protein shakes or powders.

For recipes with nothing but fruit, use the sorbet setting.

The below charts give you an idea of how long and at what speed the paddle moves for each function for the original machines. As you can see, many processes are VERY similar.
